First off - I'm not a motorcycle mechanic.
But rejetting refers to the jets or "orifices" that the fuel passes through inside the carburetor.
I Wouldn't worry about rejetting the carb until you've ridden it for a while. Changing exhaust doesn't necessarily necessitate jet change. However, changing the intake is more likely to require it than chaning the exhaust. If you hear the engine "pinging", a noise like shaking marbles inside of a tin can, that as well as backfiring is a sign of a too lean mixture and you need bigger main jets. If the bike "blubbers", doesn't accellerate as crisply as before and soots up the exhaust, the main jet is too large and a smaller one needs to be installed. Hope this helps.

As a precaution i would get it checked a.s.a.p, If i remember correctly running rich makes things a bit hot?. I would personally take it to a garage or reputable mechanic, I would imagine if bigger jets are needed then you'll probably need the carbs balancing to. Good luck with it.
