ZX10 (B1); engine cut out

Hi,

Would like to understand why engine cuts out when I 'open-up' the throttle on my zx10. The Bike had been standing idle for quite a few years so I decided it'd be a good project to work on. Anyway, I've recently refurbed brakes, clutch, wheel bearings & sidestand cutout switch (new brake pads, oil/filter, spark plugs, clutch plates & brake/clutch fluid). I then gave the carburettors, head and valves a good clean up (adjusted carbs, new head gasket, etc.).

As it currently stands, the bike runs ok but I do need to start it on the choke every time, and give it five minutes to warm up before it will idle at about 1200 rpm. That said, if I do give the throttle a quick 'blip' before it's fully warmed up the revs drop off / engine cuts out.

Grateful for any advice as to why this might be happening and what adjustments I might make to rectify problem.
